Marination: 3 Special Sauces Recipes

 

Marination is the process of using aromatic liquids to add sweet smell and taste to some food ingredients, to soften them and to extend their storage periods. The foods that are required to be marinated are kept within marinade for a while to reach the desired purpose. The waiting time depends on the condition of the meat, sometimes up to hours or days.

Depending on the cuisine and culture of countries, the marination is mainly carried out by using acidic and enzymatic elements.

The purpose of marination

The purpose is to provide the food materials with sweet smell and taste. The aromatic smells and tastes (herbs, spices, etc.) penetrate the marinated food and provide it with the desired taste and sweet smell.

Extending the storage period

The food is submerged within the acidic environment (wine and vinegar), stored in the fridge for a few days and can be rested until the moment of use. This application is generally used for the meats of the game animals and red meat.

Softening the meat tissues

The meat tissue rests and becomes softer because of the effects of the acidic materials within the marination liquid.

If you want to get the taste of the prepared marination, you should pay attention to the thickness of the meat. Marination cannot penetrate a thin slice or cannot reach the internal sections of thick slices. Therefore ensure that the thickness of your meat is between 1-3 cm.

Chop and grate the ingredients you are going to use for the marination sauce as small as possible. This way your mixture will penetrate the meat much better.

Some types of meats always need marination while others are not marinated. For example the tenderloin, rib steak etc. should be marinated. But marination would be a wrong method to cook the chops, T-bone etc.

Tandır Sauce

It is perfect for lamb and prey animals

Prep time: 10 mins Marinate time:  4 to 24 hours

Ingredients

4 cloves mashed garlic

2 tablespoons grated ginger

2 tablespoons curry powder

2 tablespoons coriander

1/2 teaspoon salt

Yogurt

 

Preparation

  • Mix all ingredients except yogurt.
  • Apply the sauce over the meat. After that cover it with yogurt.
  • Cover the saucerized meat and rest it 4 to 24 hours in refrigerate for marination.

 

 

Asya Usulü Marine

It’s perfect for beef, prey animals and fishes.

Prep time: 10 mins Marinate time: 4 to 24 hours

Ingredients

½ cup of  broth

1/3 cup of Hoisin Sauce

¼ cup of soy sauce

¼ cup of sliced spring onion

3 tablespoons dried cherries, apple juice, orange juice or pineapple juice

1 tablespoon sugar

4 cloves mashed garlic

1 teaspoon race ginger

 

Preparation

  • Mix all ingredients well in a small bowl
  • To ensure the marination sauce can fully penetrate the meats or fishes, pour the marination sauce on the meats that you are going to place within the auto-lock bags.
  • Marinate by turning the bag at regular intervals of 1 hour in the fridge. Than clean the remaining marination pieces on the meats and cook on the barbecue.

 

 

Kişnişli Fesleğen Sos

Prep time: 10 mins Marinate time: 1 hour

Ingredients

1/2 cup of fresh coriander

1/2 small red onion (chopped)

1 teaspoon chopped well lemon zest

2 tablespoon lemon juice

2 teaspoon Worcestershire sauce

¼ teaspoon cumin powder

¼ çay kaşığı marjoram

 

Preparation

  • Mix all ingredients well in a mixer until smooth
  • To ensure the marination sauce can fully penetrate the meats, pour the marination sauce on the meats that you are going to place within the auto-lock bags.
  • Marinate by turning the bag at regular intervals of 1 hour in the fridge. Than clean the remaining marination pieces on the meats and cook on the barbecue.
